An evening at the Refettorio, experienced by the teams from the Mercure Paris Porte de Versailles Expo

Just over a year ago, the Refettorio at la Madeleine opened its doors in Paris. This community restaurant, the spin-off of the Refettori restaurants of Milan, London and Rio, created by Michelin-starred Chef Massimo Bottura, has a dual social objective: to combat food waste while allowing a hundred or so socially vulnerable people (so-called “guests”) to eat healthily and free of charge.

Accor Solidarity has supported the creation of this restaurant and volunteers from the Group have been serving in the dining room every month. In total, over 20 volunteer sessions involving more than 100 employees have served nearly 2,000 meals.

In early April, the teams at Mercure Paris Porte de Versailles not only participated in serving at the community restaurant but also manned the Refettorio kitchen for the evening. It was a great first for Accor volunteers!

Depending on the products collected in the morning - and which were destined to be thrown away - the Chef imagines a balanced, gourmet and smart "starter-main-dessert" meal that quickly uses perishable foodstuffs. Chef José Bangard of the Mercure, accompanied by Lionel, his second and Eric, Chef de Partie, have come up with the following menu:

*** Cream of butternut soup with hazelnut bread ***

***** Chicken breast with roasted leeks, carrot, turnips and rich jus *****

*** Chocolate brownie with pear sorbet, chocolate cream and pineapple ***

In the dining room, Philippe, the hotel director, supported by Rafael, the Food & Beverage Manager and Justine, Executive Assistant, helped serve the meal to the evening’s “guests”. This moment is intended to be friendly and warm, where dialogue and discussion are of the utmost importance. 

The team was “very well received” and “there was great chemistry”! Eric and his pink beard in fact inspired one of the guests, who dedicated a drawing in appreciation.

It was a special moment for the volunteers, shared in a warm and beautiful setting.

Other teams will follow, such as that of the Sofitel Le Faubourg, which already helped the Refettorio in May! Watch this space...…
